Its been a couple of weeks of getting back into the swing of daily runs, healthy eating, and cross training. In an effort to move away from eating the same dinner just about everyday of the week, I’m branching out and trying some new recipes. Tonight I am trying a recipe for the 2nd time. That means it was a big enough hit to make it into our menu rotation.

Ingredients

  • Tilapia Filets
  • Flavored Panko Bread Crumbs (this last time I used Private Selection Chipotle – Lime. Warning, it was pretty spicy)
  • Flour
  • 1 Egg

Directions

  1. Preheat oven to 350
  2. In small bowl (big enough for filet to fit in) lightly beat the egg
  3. Put Panko Bread crumbs and flour into separate bowls (or plates)
  4. Dredge each filet in flour, then dip into egg wash. Coat in Panko Crumbs
  5. Bake in oven for 20 minutes

I know, seems pretty simple, but the flavored Panko Crumbs make all the difference. They give a nice crunch, almost like fried fish. The most amazing part; I am not a huge fan of fish. Ok, honestly that is an enormous understatement. But I know that it is a good thing to add to our diets. To find a way that the entire family will eat it is a win in my book.
