Lettuce Wraps – A Success!

I great so excited when I find a Pinterest Recipe that turns out correctly and that the family likes! I have had lettuce wraps one time in my life, and I remember liking them, so when I found a recipe for them on Pinterest, I decided to try it. I really need to change up our typical menu. This won’t make a super regular appearance – honestly it is pretty high in sodium.  But I am always looking for high protein meals, and this really fits the bill.

Before I share the recipe – let me just say I did find it on Pinterest and it was originally posted at www.pinchofyum.com (find it here). I am posting the original version here – but in my opinion I ran out of extra sauce. Next time I make them, I think I will make a little extra.

Peanut Chicken Lettuce Wraps with Ginger Garlic Sauce

Sauce Ingredients

  • 4 tbsp soy sauce
  • 3 tbsp oyster sauce
  • 3 tbsp water
  • 1 tbsp sambal oelek
  • 1 tbsp honey
  • 1 tbsp fresh ginger
  • Juice of two limes
  • 2 garlic cloves, minced
  • 4 green onions, minced
  • 1 tbsp rice vinegar
  • 1 tsp cornstarch

Lettuce Wrap Ingredients

  • 2 tbsp sesame oil
  • 1 lb ground chicken or turkey (I used chicken)
  • 1/2 cup lightly salted peanuts, chopped (I used dry roasted)
  • 6 ounces rice noodles
  • 12 leaves of lettuce (Boston)
  • Chopped cilantro, green onions, and peanuts for topping

Instructions

  1. Whisk all the sauce ingredients together in a small bowl. Pour about 3/4 of the sauce into a bowl with the ground chicken and peanuts. Stir to combine – marinate for 15 minutes.
  2. Soak the rice noodles in a large bowl of water while the meat is marinating. When the noodles are softened, drain and rinse with cold water. Cut into small pieces.
  3. In a large skillet, heat the sesame oil  over medium heat. Add the meat and peanut mixture and saute for 10 minutes or until cooked through. Add the noodles and stir fry for another 5 minutes  or until soft, adding a splash of water , oil, soy sauce, oyster sauce, or lime juice to moisten the pan as you see fit.
  4. Remove from heat, scoop mixture into lettuce leaves, top with cilantro, green onions, peanuts and reserved sauce.

I think the most fun was shopping for ingredients. I did find everything needed at my local Fry’s, but for Lil’ WO, who is very used to the “normal” ingredients I buy, seeing some of the ingredients, especially the oyster sauce, it was a little disconcerting. I am pretty sure he thought I was out to poison the family. But he was the one who finished off the leftovers while playing video games later that night. Like I said, it was a winner for my family… try it out and let me know what your family thinks!

    Thanks for sharing! My tnniriag routine doesn’t change too often, but my goal is to always be prepared to run a 10K half marathon with short notice. I am a pretty type A type person, so planning and routine is critical to me. I get my workout on first thing in the morning at 4:30AM 6:00AM M-F and 6:00AM-8:00AM on Saturday. My routine is strength tnniriag and core M, W, F and running 6-8 miles Tu, Th, 10-15 miles Saturday. I stopped running with music when I started my 4:30AM workouts (mainly due to not wanting to lose out on family time in the evenings). Instead I take that time in the morning while I run to talk with God and more importantly listen to him. It is great (and cheap) therapy.Also, if I miss a day, it isn’t pretty. I can just tell I am off the whole day! Good luck with the tnniriag and keep up the good blogging!
